Open .blend Files with the appropriate Version of Blender
Open .blend files with the appropriate version of Blender. In the old .blend files there is nearly always the info about the version of Blender: (BLENDER-v279RENDH) or similar. In newer versions like 5.0, there is a toml file with the Blend version. My idea is to have more than one Blender version registered. I am not a coder, so I do not know how to achieve this. It would be amazing if you could open a blend file from 2.79 with the correct version of Blender. Maybe a sandbox system would help. But that version changing is going on for the future, and it would be great if Blender should handle that instead of the operating system.

Blender Lanucher can launch Blender based on blend file version.
But this requires another software which is actually the one "deciding" which Blender build to use, it's not a file association on the system level.
And AFAICT it merely lets you select a different set of Blender builds depending on what "you the user" thinks which one it might be, so it's still not automated really.
