Action on render finish
This would be a very useful setting when you have a long render (especially animations) and may or may not need to act at certain points. I know there's an addon to ring when a render's done, but other possibilities would be great- like sending an email. If my phone dings with an email saying "your render is finished!" or even better sends intermediate animation preview renders (like "send a 50% still of frames x, xx and xxx) by email to check all's well it would allow for a better organisation of renders.

The same Python callback used in the Render Music add-on (full disclosure, I wrote that one :) can be used for all manner of notifications upon render completion. I know some people have tied it to notification systems in KDE and (IIRC) Mac OS.
So the feature is already there. With a little bit of Python, anyone can take advantage of it... or are you suggesting something more specific?
is it possible to also play sound at the end of a simulation (particle, smoke, fluid) ?
There's not currently a handler in the Python API for the event that fires when a simulation/bake completes. Might be a nice thing to have, though. Probably would only work for baking simulations, though, not for simulating on the fly.
