It would be good for the knife tool to snap to increment, because currently there is no option for it

Distance or increment snapping for knife would very nice... Right now I just do Shift+S->Selection to grid on new cuts when working on grid in orthographic views, kinda annoying and tedious extra step.

Do you mean something like 5, 10, 55 degrees. Whatever degree you want? If that is what you mean, I am in total agreement. It blows my mind this is not a feature. . .

Angle snapping for knife tool is already in blender:
You can adjust angle for shortcut K knife version in keymap preferences if 30 degree angle is too much:
