Add RMB option to create a New Collection.
When selecting an object or multiple, add the RMB option quickly create a "new collection", as I forget the shortcut.

There is "new collection" option when right clicked at outliner in 2.83b version. However it's just creating a new empty collection (It's not moving the selected objects into a new collection which I think would be better as you suggested).
