Retopology: Culling Volume
In Object Properties under Viewport Display, add the option to use any mesh as a culling volume to improve visibility while retopologizing a mesh.

At the moment a workaround is this addon: gumroad.com/l/draw_xray I use it every time I do retopology and it helps a lot. You can get it for free from Gumroad and use that as an alternative until it's implemented by the devs. :)
