Per-Object Baking
As things stand right now, baking works on a per-material basis. Every material that contributes to a bake must be set up to do so. I sincerely hope that in the near future we have the option to bake on a per-object basis as well.
To elaborate, imagine if there were an additional section under the Bake section in Render that let you slot in objects or collections to instead tell the baker to go by a per-object basis instead of individual materials. (of course, this section will have slots to slot in the receiving textures as well) I believe this will help immensely with big bakes involving lots of materials.

Very much needed. If an object has 50 different materials on it you have to modify all of those 50 materials. If those materials are on other objects as well you'll have to un-change them afterwards, which is VERY tedious.
Also, the need to select the image texture to bake to and have it be the active one is VERY risky if you have to go through a lot of materials.
Ideally, you'd just select what you want to bake, select the object, select the UV set on it to use for baking and press "bake", it would render and save it to a file you specified in the bake tab instead of forcing you to manually save it.
Yep I crave this.
