We still waiting for so many years for just simple option to undo knife step, I don't even remind about just to be able to snap damn knife to something outside of object mesh... as well as dozens of other requests for knife which stay here for ever . Now you asking to cut edges.... (laughing)
No one care today at just poly modelers. Sculpting - yes, nodes - yes, poly modeler - f*** you. They don't care man, really, It will never happen. You will check your topic after 3 or 4 years and things will be the same as today.
It seems sad true ./
Have you checked out this year GSoC on Knife tool ?
ยน- since its just gosc it might not get into master, but is at least quite promising
thx @zuorion discusion is here:

Nope...I have ton of things to do other than checking another GSoC moves. As far as some Blender Today didn't tell me about such move - I didn't know )) Glad to hear about it from you, hope I am wrong in all my criticism.
Already checked his progres reports - no word about snapping to outside of currently edited mesh. Without this single feature knife tool will stay almost same useles (at least for me) as it were all this years. For some unknown reasons for Blender devs it is not clear why such snapping should exist first of all ๐ ...
Use Snapp Bisect addon as alternative ( check this Blender Artists topic for more details )
If you will decide to use it - to assign hotkey create new keymap in
3D View > Mesh
section.
Line tool can make vertices on edges. But one by one. As temporary solution.
Also, I think it is possible to make script, that will dissolve only edges, but not vertices. I think, this approach will be more uviversal than just knife with such function
Knife could also be draw as bezier curves to draw more complex shapes
