The current GP lacks text functionality. Converting standard text features to GP format causes graphical anomalies and results in overly cumbersome operations.

The devs are working on a new holes in fills function. So i assume there will be no native greasepencil text function. You will just continue to convert text objects to Greasepencil and it should convert correctly. This is the project here: projects.blender.org/blender/blender/issues/114071
