Filling face with an option without edges being auto filled in

As the title self explains. I wish the need to fill faces without additional edges or beauty. My intention is that when I do hard surface modeling, I realize I need a clean face while freeform model ideas. Having edges already filled in for me is like obstacles and preventing from me to create more intentional knife cuts or shapes in the way.
