Press Esc to cancel one thing at a time
I would like to propose a new behavior in the following workflow:
- Start a render.
- Start doing something else that can also be canceled with the Escape key, such as G for Grab (with one or more objects selected), or typing a new Exposure value under Color Management.
- Press the Escape key.
The current behavior is to cancel both the render and whatever else, in a single Escape keystroke. If I just want to cancel G for Grab, or typing a new Exposure value under Color Management, or whatever else, then I have to find another way to cancel. I would prefer that the Escape key cancel one thing at a time.

Personally I use the "solution" of having a separate machine for rendering. (A lazy excuse of "just throw money at the problem" and I understand it isn't an applicable answer to most people)
Or to simply not work on a project that is currently rendering. (Not always time efficient, since one might still want to work on the project in parallel to a lengthy render)
Third solution, start another Blender instance for rendering. (Downside, it will use more system memory as you effectively have everything in memory twice)
But at least it is three workarounds.
You can use right click to cancel pretty much every UI action.
That's helpful to know, so thank you, but I still would prefer that the Escape key cancel one thing at a time, mostly because that would be more consistent with what I have learned to expect from other UIs. For example, in a Windows dialog box with a "Cancel" button, right click on something to bring up a context menu. Then press the Escape key once to dismiss the context menu, and again to invoke the "Cancel" button of the dialog box.
If I'm expecting the Escape key to work this way, then the current behavior will cancel the render when I don't intend to do so. A render can take a long time, so that's not very cool.
