Documentation should have a Dark mode too.
Now that Blender has a nice Dark Mode UI option, so should the documentation. Switching to the docs with the current color scheme to quickly look something up, means having your retinas blasted by a wall of white. Uncomfortable and forcing your pupils to constantly accommodate, especially if multiple round trips between Blender and the documentation is required.

Could be nice, though, if you think this is a health concern:
Having your pupils accommodating to a different environment is not a health issue on itself, it's actually a good thing. In fact, not doing it enough is part of what causes the Computer Vision Symptom suffered by people who spend too much time on a screen every day.
Many of the recommendations to avoid or reduce CVS include exercises that are all about making your eyes do something different frequently. Like the 20-20-20 rule that frequently goes viral.
If you feel any discomfort by switching between a dark and light themed screen, you may have more concerning issues to take care before worrying about the color themes of your apps and websites. The biggest one being most probably your screen brightness. No color theme will fix that issue, a black pixel on a black screen is still a beam of more-or-less-gray but very bright light.
Second concern should be your environment, you should ideally be in a room with an overall brightness that matches your screen to some degree. Don't be in a dark room nor a sunbath. Third, adapt your screen contrast and color balance so that you see different shades and colors clearly.
Lastly, you can worry about color themes in your apps. But if the above is done correctly, and you are not vision impaired, this last point should be mostly about esthetical preferences rather than actual health concerns. Some research showed that light themes feel better in a lighter room and dark themes feel better in a darker room. But again: you shouldn't be in a dark room with a laser-beam screen nor in a light room with a charcoal screen.
As to the claims that dark schemes are healthier than light, it's debatable at best, research is still ongoing, and the outputs so far can be best summarized as "it depends".

Thank you for the information. My office is set up pretty well and I make sure to take frequent breaks.
I don't think it is a health concern either. It's just not ideal to have your pupils thrown out of whack in the middle of a working session.
