Wouldn't it make more sense to have the In Front option enabled by default when we create an armature?

Agreed! I don't know if I've ever had a situation where I DIDN'T turn on "in front" immediately. :D
Yes, would save a lot of time than to change the visibility to front each time first, at least the possibility to set this as default setting in the preferences would be desirable.
