Make ESC only cancel one task at a time
For the third time in two days, I have been previewing a fluid sim bake while it was still baking, and pressed escape to stop playback. Which also cancels the physics bake with no warning. Which then needs to be restarted from scratch.
Can Escape please no longer be the Shut Down Everything button? Something like a task stack where Escape just cancels the most recently started task would be great.

Or use the right shortcut to play/stop playback : <kbd>alt</kbd> <kbd>A</kbd>.
Aaand I just pressed Escape to deselect a text field and canceled a bake that had been running for 43 hours.
What the hell, guys?
Let Blender do his job, and then modify your scene. Or work on a separate instance.
@loic.dautry: "Start the bake and don't touch it because a single errant keystroke will destroy hours of progress" is not a good level of usability. That there are ways to proceed safely once you're aware of the problem doesn't mean there is no problem.
There is a problem, but IMO it's not as you think. The problem is that <kbd>esc</kbd> is used for a lot of things, even when it's not necessarily needed nor logical.
I.E. why it stops animation playback while this already has its own dedicated shortcuts? Why does it cancel Baking and rendering while both of those tasks are background task which both have a specific accessible cancel button?
or if there are more than one process active (animation, baking, rendering...) show a popup to choose which one must be stopped
