What is the actual benefit of this? When does one ever need to select text in such a way that completely disregards whole words and sentences?

In word, the video shows it. But in Blender, that sounds like an unneeded feature considering the very little formatting options we have in text objects and their total absence in the text editor.

Select all of that, paste it into a spreadsheet, then select the column and you're done. It's just text, and a new feature or an add-on is completely unnecessary.
It would be a bit like asking for blender to have a grammar checker for all of your text... Like, check the grammar in the word processing program before you selected all and paste it into blender.
