Actually symmetrize option makes a "mirror" of entire half. Why not to tell to it, which parts we want to symmetrize using mask tool?

For what it's worth, this was brought up a few years back as something worth working on, but it never got around to being implemented.
That is something really usefull for correcting symmetry errors or sculpting things that are only partially symmetrical. For now I am doing partial resymmetrising in edit mode, which is really slow.
