Ngon Displacement or Extrude modifier
Some people like to use the knife tool to creat ngons on a texture (around say a couple bricks) so we can extrude those parts to add more flare to it. I was thinking what about a sorta displacement modifier for this an ngon one that works solely on a black or white image no grey gradients though. You use whatever image, it does some voodoo magic which traces the black lines as if using a knife (down what can be considered the center of a line for thiccum lines) tool then extrudes it on whatever axis you choose. You also have a scale option that basically insets the polys before extruding them out. The grey map comes in from blender itself. Random extrude option. Blender in the background goes around and assigns a color to each basically enclosed space (like a paint bucket tool) and extrudes based on that value instead. Using a min-max option of course. Min: .5 Max: 1 the minimum grey will then be a 50 percent grey material that would be medium height and the max will be white/whatever you set height to be.
I know it would probably kill coders but it is just a notion. I think this has a lot of potential and would be better than displacement in some scenarios. Even in some scenarios could save using displacement. Rendering faster and saving on memory. I know figuring out artifacting and such will be the biggest issue with this but you guys did pretty good with booleans this shouldn't be entirely out of the realm of possibility for you. You guys basically have this as part of one of your extrude tools even.

add black and white brick image
use grease pencil feature to convert image to grease pencil
convert grease pencil to mesh
delete unwanted edges and use the remaining brick outline shaped edges with the knife project feature to cut into the brick shapes of your colored texture
select all the bricks and extrude them
then use randomize transform to make some more extruded than others
If rendering with Cycles use the bevel shader to soften the edges of the bricks automatically
* @thinsoldier * This is why I suggested what I suggested. What you said vs one click with a lot of options. Could be good with geo nodes.
