Color Picker Covers The Color Ramp
PROBLEM: Currently, the color picker popup covers the gradient we are trying to edit.
IDEA / SOLUTION : Make it pop up downward/sideways, so we are seeing the color changes in the ramp we are editing.

But it doesn't cover the thing you are changing - which is the bar of color right there that you clicked on to change. Once you dial in or type in the hex code, the color picker disappears, and you see the result in context above with the color ramp. This isn't any different than with Adobe as far as the result of the picking doesn't move to the color ramp/gradient until you commit to the color selection so seeing the previous state of the color ramp has no effect on the choice made.
Yes, but converting the ramp itself does make it impossible to preview the actual gradients of hot the colors are mixing.
