Anybody know whats going on here?
Is this a bug or somit else?
Suddenly the UI turns to crap, the texture colours are different in each TAB, I saved to try refesh Blender BUT it saved the crap into my file youtu.be/IPbLVzlBDJg

Viewport Clipping
It looks to me like you have multiple overlapping copies of the same objects, like you accidentally made a duplicate, maybe. Try hiding each object one by one. You might find something that's not supposed to be there.

ALL same single collection, its only the Modeling TAB and the shading TAB that are broken
* @kiwi.hawk.nz * it's not broken, each viewport is a separate one, go to the view tab in your T panel as do as @sudoblenux suggested, change the clipping start and end values, 0cm 1 pico-meter is TOOOOOO low, I suggest you to use 1cm or as a minimum value 1 mm, and the end use 100m or 1000m as a maximum value, you should not need such big values for character modelling.
* @Juan Gea Rodriguez * it seems 2.81 alpha has this set at 0.1 and 1000 has default now across every workplace and Camera (Object) is set to 100 also which is good to see.
* @sudoblenux * if it was an old scene it could be wrong because bad old settings translation to newer version
