Change the TEXT- NAME with the TAB-button

Hello, I need again help with my file.

I have a text named "CINEBRICK-STUDIOS", but I want to Change it in "***** ANIMATION STUDIOS".

BUT: When I go in TAB-Mode I can not Change the TEXT, instead I can Change the polygones or something other.

I just want to rename the Text from "CINEBRICK STUDIOS" in "****** ANIMATION STUDIOS"

AND: It only Shows wireframe when I go in TAB-Mode!!!!!!!!!!! All other Settings should stay that way!!!!!!!!
